The Secret Behind The Pies at Mick’s Bread Kitchen

Mick’s Bread Kitchen has long been renowned for the kind of pies you’d drive over state lines for. The secret? It’s the bakers who work through the night to simmer fillings, roll pastry, and turn mixers in a choreographed routine that results in a full cabinet come opening time.  

Working their magic from around midnight through until morning, the bakers can spend up to eight hours making Mick's award-winning pies from scratch, motivated by the commitment made in the bake house’s motto: “They Set the Standard.”

On any given day the production includes around 26 varieties, from traditional favourites such as chunky steak pies to constantly changing creations that keep customers coming back to see what’s new.  

One of the latest flavours created by Mick's daughter is the four-hour-smoked brisket, jalapeño and cheese - an immediate fan favourite that has had pie connoisseurs travelling to Ingham just to take a bite.

The bake house’s offering does not stop at savoury pies. Sweet pastries, apple pies, doughnuts and other baked treats are also made on site. Their shortcrust pastry is prepared from scratch with the familiar ingredients of butter, sugar, and a dollop of love.

Stationed at Ingham, Mick’s Bread Kitchen is a beloved stop-off for those travelling the east coast, situated just a stone's throw from waterfall walks and the Hinchinbrook coastline.  

The journey is also recommended to connoisseurs and foodies seeking out that perfect traditional Aussie Meat Pie, chasing a national staple whose craft is often underestimated, and becoming increasingly difficult to find.

Making pastry from scratch is labour intensive. It requires space, specialist equipment and, perhaps most importantly, skill. As more bakeries turn towards pre-made products, Micks are holding up tradition; whether through flavours loyal the classics, or with a twist.  

By pouring care into every golden pastry case, Micks are doing important work – creating food for the soul, well worth making a trip for.
